Coming home from Anchorage tonight the moon was just coming up over the mountain . Oh, by the way it was only 4:30 in the afternoon.

Reahna decided she had waited long enough for her brothers to get the Jetta running , so she cornered Dad into helping her and they almost have it done.

What A Great Week-End

It started out with Marissa and David coming out from Anchorage for the week-end.They are so much fun! We all went to Bouncin' Bears with Ginny, Matt and the kids. Dad got stuck, Marissa and Ginny had to help Amanda to the top of the slide or she would still be there, Makenna helped me to the top of another slide . I think we were all laughing the whole time we were there. Saturday we stayed up pretty late playing games afterDerek had made the yummiest dinner.( I love it when someone else cooks)Then on Sunday we went to the Primary Childrens' Sacrament Program at Garic's and Ginny's Ward. And of course my grandkids were the cutest and the best. I had 6 of them up there.After that family dinner at Matts' and Ginnys' . Too much good food. More laughing. And just all around lots of love. I feel so blessed to have such a wonderful life.

Thick Crust Pizza Dough

I think this is turning into a recipe blog. Oh well, I do love to cook ( almost as much as I love to eat )

Thick Crust Pizza Dough

2 packages yeast ( or 4 1/2 tsps )
1/2 cup flour
1/2 cup warm water
3 1/2 cups flour
1 tsp. salt
1 cup cool water
1 TBSP olive oil

Mix yeast, 1/2 cup of flour, and 1/2 cup water in a bowl then cover with plastic wrap and let rise for 15 minutes. Stir, then add 3 1/2 cups flour, salt, 1 cup cool water, and oil. Knead for about 10 minutes, until smooth. Place in oiled bowl and cover with plastic wrap and let rise until double.
Place in lightly oiled pans and pat out to the sides . Let rest for a few minutes then push back out to sides. Let rise for about 15 minutes then cook for about 10 minutes in 450 degree oven. Remove from oven put on your favorite toppings then return to oven to finish baking.

Makes 2 round pizzas

Chocolate Syrup

Here is the chocolate syrup recipe just in case you don't have any chocolate milk , so you can make your own. This is great on ice cream too, especially when the ice cream is sitting on top of a big thick warm brownie! :)

Chocolate Syrup

1/2 cup unsweetened cocoa
1 cup water
2 cups sugar
1/8 tsp salt
1/2 tsp vanilla

In a large saucepan mix the cocoa and water with a wire whisk. Cook over medium heat, stirring occasionally, til warm. Add the sugar and continue to stir until the sugar dissolves. Bring the mixture to a full rolling boil. Reduce the heat to medium low and boil for a full 3 minutes. Remove from heat. Add the salt and vanilla. Pour into jar, cover with lid and store in the fridge.

Black Forest Pancakes

1 1/4 cups flour
1 1/2 tsps baking powder
1/2 tsp baking soda
3 TBSP sugar
2 TBSP cocoa
1/4 tsp salt
1 cup chocolate milk
1 egg
1/2 tsp vanilla
1 1/2 TBSP butter, melted

Mix dry ingredients. Make well in center.
Combine chocolate milk, egg, vanilla and melted butter.
Add to dry ingredients, stirring just until moistened.
Cook pancakes on hot griddle as usual.

Top pancakes with warmed cherry pie filling and cold whipped topping and enjoy.

Chocolate for Breakfast - Life Is Good

Marissa told me about these pancakes she had, so I had to try them . It's like having dessert for breakfast. Chocolate pancakes , cherries , and whipped cream. YUM !

Fair , Family, Fruit, and Tracie Lawrence

The past couple of weeks have been really busy. We went to the Alaska State Fair and it was great, all the food all the exhibits and all the shows ( I don't do the rides ) . We went several times and were able to be with all the kids and grandkids ( on different days of course, I don't know if the fair could handle the whole family at once ) While I was in AZ , dad got the tickets for the Tracie Lawrence performance. We had great seats! He is one of my favorites. That was a great anniversary present. 32 years - wow! Now the fruit part. One of our freezers decided to take an early retirement with out giving any notice How Rude. I was just thankful it was the one with the fruit and vegetables and not the one with all the meat. So I got to do some quick canning. I was sure glad I had brought my pressure canner back with me on the plane. Ha Ha . We had homemade pizza one night too. Brittany had never made them, she and Amanda ( and Cedar of couse) made the best pizzas, just the right amount of toppings. I finally found the perfect dough recipe for the crust.
